I got this recipe from a friend (Shoutout to Aaron) who, I think, got it from his mother. It taken from a whole sheet of vegetarian recipes that I’ve included below.

Just a note, this recipe makes a lot of food. It made enough to fill a 2 Liter container that I had.

I left out the corn and used two jalape�o peppers in this recipe. It turned out what I call “spicy”. It’s not crazy spicy or anything but it’s definitely not mild.

Black Bean Orzo Salad

  • 3 cups Orzo
  • 1 can black beans (rinsed)
  • 1 can corn (rinsed)
  • 1 red bell pepper
  • 1 green bell pepper
  • [optional:] Green onions and/or jalape�os to taste
Sauce
  • 1/3 cub canola oil
  • Juice of 1 lime
  • 1 tbsp of cider vinegar
  • 1 tbsp of brown sugar
  • 1 tsp chili power
  • 1 tsp cumin
  • 1 tsp salt
  • 3 tbsp parsley

While the orzo is cooking, mix sauce ingredients in bottom of a large bowl. Drain and rinse beans and corn. Dice the peppers. Add them to the bowl and mix well. When orzo is finished cooking, drain and add it to the bowl. Mix well.
